DISCOVER KAFFEEHAUS' NEW LIMITED EDITION COFFEE!

INTRODUCING THE NEW DISCOVERY COFFEE

Discovery is KAFFEEHAUS' rotational limited edition coffee allowing them to bring you some exciting new flavours to sample.  The current Discovery is a coffee from the wonderful Brazilian producer Mio.

The coffee that has been chosen is a bean which has undergone a 72h volcanic fermentation process resulting in a deliciously sweet and juicy cup.  Roasted to a medium light profile, the Discovery limited edition coffee produces a soft sweetness with notes of yellow fruits and macadamia and a round creamy mouthfeel.

WHAT IS VOLCANIC FERMENTATION?

Coffee cherries that have started to dry when still attached to the tree are overripe cherries.  They are able to give great results under controlled fermentation processes. In the volcanic fermentation process, the overripe cherries are fermented in small mounds, covered for 72hs, using saccharomyces cerevisiae as a starter yeast.  The result is a juicy profile with yellow fruits, such as mango and peach, and a sweet and creamy mouthfeel with pleasant acidity.  This coffee has been created with 70% overripe cherries.

Bernhard and Catrina are excited to showcase another Mio coffee and are looking forward to bringing you more of their wonderful coffee in future as they continue to work alongside this fab family coffee farm in Brazil.
